Keto-ish Spicy Marinara Sauce

If you are feeling more on the lazy side, I recommend using Yo Mama's Spicy Marinara Sauce, which is available at some grocery stores.

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 stalk Celery
  • 1 medium yellow onion
  • 6 cloves garlic (or more, to taste)
  • 2 Pints Chicken Stock
  • 1 Large Can Crushed Tomatoes (28 oz)
  • 2 pinches Italian Seasoning
  • 1 pinch Thyme
  • 1 pinch Oregano
  • 2 bay leaf
  • 2 Roma tomatoes
  • Calabrian Chili Flakes (to taste, but a lot)
  • Salt (to taste)
  • Pepper (to taste)
  • (Optional) Fresh Basil (to mix it up)

Instructions

  1. In a large pot or dutch oven, heat the olive oil over medium heat.
  2. Add the diced onion and celery, sautéing until translucent.
  3. Add minced garlic and sauté for another minute until fragrant.
  4. Pour in the chicken stock and bring to a light boil.
  5. Stir in the crushed tomatoes, Italian seasoning, thyme, oregano, bay leaves, and half the calabrian chili flakes.
  6. Let the sauce simmer for about 30 minutes, stirring occasionally. Can simmer longer for deeper flavor. You are looking for a sauce that is no longer watery, but not too thick so that it won't coat things.
  7. Chop and add the Roma tomatoes.
  8. Add the remaining calabrian chili flakes, basil, salt, and pepper to taste.
