Keto-ish Spicy Marinara Sauce

If you are feeling more on the lazy side, I recommend using Yo Mama's Spicy Marinara Sauce, which is available at some grocery stores.
Ingredients
- 1/4 cup extra virgin olive oil
- 1 stalk Celery
- 1 medium yellow onion
- 6 cloves garlic (or more, to taste)
- 2 Pints Chicken Stock
- 1 Large Can Crushed Tomatoes (28 oz)
- 2 pinches Italian Seasoning
- 1 pinch Thyme
- 1 pinch Oregano
- 2 bay leaf
- 2 Roma tomatoes
- Calabrian Chili Flakes (to taste, but a lot)
- Salt (to taste)
- Pepper (to taste)
- (Optional) Fresh Basil (to mix it up)
Instructions
- In a large pot or dutch oven, heat the olive oil over medium heat.
- Add the diced onion and celery, sautéing until translucent.
- Add minced garlic and sauté for another minute until fragrant.
- Pour in the chicken stock and bring to a light boil.
- Stir in the crushed tomatoes, Italian seasoning, thyme, oregano, bay leaves, and half the calabrian chili flakes.
- Let the sauce simmer for about 30 minutes, stirring occasionally. Can simmer longer for deeper flavor. You are looking for a sauce that is no longer watery, but not too thick so that it won't coat things.
- Chop and add the Roma tomatoes.
- Add the remaining calabrian chili flakes, basil, salt, and pepper to taste.
